Bechamel Sauce
Ingredients:
3 Tbsp butter
3 Tbsp flour
1/2 onion chopped
2.5 cups hot milk
peppercorns
thyme
bay leaf
salt
nutmeg
Directions:
Heat butter until bubbly
add onion and cook over low heat for 3 mins
stir in the flour
cook a few more minutes
begin adding milk, bit by bit stirring w/ a whisk
when the sauce thickens after a few mins
add all the herbs/spices
cook slowly 10-15 minutes
strain through a sieve
