Danish Ebleskiver

Ingredients: 
2 c buttermilk 2 c flour 3 eggs, separated 1 tsp baking powder ½ tsp salt 1 tsp soda 2 Tbsp sugar applesauce
Directions: 
Beat egg yolks, add sugar, salt and buttermilk. Sift flour, soda and baking powder together; add to egg mixture. Beat egg whites until stiff and fold into batter. Heat ebleskiver pan. Grease cups well. Fill ½ full with batter. Place a small spoonful of applesauce on top; then cover applesauce with a few drops of dough. Cook until bubbly; turn carefully with cake tester or fork and finish baking on other side. Serve hot with powdered sugar or cinnamon sugar. Avoid spilling applesauce in cups or ebleskiver will stick to pan.
