Muffins
Ingredients:
1 1/2 cups oatmeal
3/4 cup whole wheat flour
1/2 cup white flour
1/2 cup packed brown sugar
3 T oat bran
1 1/2 teasp baking powder
1 teasp cinnamon
3/4 teasp baking soda
1/4 teasp salt
Directions:
Mix well. Add 1/2 cup raisins or currants. Can also add 1/4 cup dates and
1/2 cup chopped walnuts.
In a 2 cup measure, combine 1 cup milk, 1/4 cup oil and 2 slightly beaten
egg whites. Add this mixture to the flour mixture. Stir just until
moistened (the batter should be lumpy). Spray muffin cups with cooking
spray or line with paper bake cups. Spoon batter into cups, filling cups
full. Bake at 400 F for 18-20 minutes or until light brown. Cool slightly.
